Is Meat Glue safe to use?

Yes! Meat Glue (or Tranglutaminase) is categorized by the FDA as 'GRAS' (Generally Recognized as Safe). It does not transform the proteins bonded or 'glue your insides together'. Most likely you've already had TG many times! Deli meat, imitation crab in California rolls, hot dogs... 

The only safety concern when using TG in your cooking is that any surface bacteria that may be present on the protein will still be present after the TG sets if that surface has been bonded to another piece of protein. To ensure food safety the dish will have to be cooked to the proper temperature to kill the bacteria.
