How do I use Ultra-Sperse?

Dispersion and Hydration

Ultra-Sperse can be dispersed and hydrated in both hot and cold liquids using a whisk or blender.



Usage will depend on desired thickness of sauce. Use between 0.2-5.0% ratio by weight. The higher the concentration, the thicker the sauce will be. If you are making a foam, use 3.0-5.0% Ultra-Sperse. Use less, ~0.2-3.0%, if creating a light froth.


Ultra-Sperse M – used for low pH products. Thickens cold and frozen products.

Ultra-Sperse 3 – used for hot products. Can also handle refrigerated products and some frozen application.
